Step 1

Start by selecting the saute function on the Instant Pot and add EVOO

Step 2

Cut the pork roast into large chunks, about 2-3 inch pieces

Step 3

Slice the white onion into 1/2 inch slices and set it aside

Step 4

When the display reads HOT add the pork to the Instant Pot and sear on all sides

Step 5

Season meat with chipotle powder, black pepper, salt, onion powder, cumin, & oregano

Step 6

Select cancel/off to turn off the saute function

Step 7

Add broth and lime juice and deglaze the bottom of the pot to be sure there is nothing stuck to the bottom of the pot.

Step 8

Add bay leaves and white onion slices on top

Step 9

Lock the Instant Pot lid in place and select manual/pressure cook

Step 10

Set the cooking time for 60 minutes

Step 11

When the cooking time is complete allow for the pressure to release for 15 minutes

Step 12

When the lid can be safely removed shred the chunks of pork using two forks

Step 13

Using a slotted spoon remove the pork to a bowl for serving

Step 14

Serve on warmed flour or corn tortillas

Step 15

Top with diced purple onions, fresh cilantro, sour cream & salsa

Step 16

Place pork on a baking sheet at bake at 450° for 5-8 minutes or until you've reached your desired crispness

Step 17

Reserve juice from the Instant Pot to drizzle over the pork once it's crispy

Step 18

Serve as noted above with your choice of toppings
