Step 1

In a small bowl, whisk all sauce ingredients except powdered peanut butter and smooth peanut butter (they will burn if you put them in before cooking)

Step 2

Pour 1/2 of the sauce into the bottom of the Instant Pot

Step 3

Add chicken, then add remaining sauce

Step 4

Close and lock the lid and turn the steam release handle to Sealing

Step 5

Set Instant Pot to high pressure for 12-14 minutes (do 14 mins for thicker pieces of chicken)

Step 6

Follow with a manual release

Step 7

Remove chicken, shred, and set aside

Step 8

Pour the sauce into a bowl and whisk in powdered peanut butter and smooth peanut butter

Step 9

Set Instant Pot to sauté

Step 10

Add bell pepper and broccoli slaw

Step 11

Sauté for 5 minutes or until pepper begins to soften slightly

Step 12

Return sauce to the Instant Pot and mix

Step 13

Return chicken to mixture and stir to coat

Step 14

Add a little chicken stock if the sauce is too thick

Step 15

Serve chicken mixture over a bed of rice and top with fresh cilantro, green onions, and peanuts (if desired)
