This simple one-dish meal is great reheated the next day for lunch.

Italian Chicken with Chickpeas

chicken breast tenders

salt

black pepper

olive oil

onion

green bell pepper strips

garlic

can chickpeas, drained

tomatoes

flat-leaf parsley leaves (optional)

Sprinkle chicken with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Add chicken to pan; cook 2 minutes on each side or until browned. Add onion and bell pepper; saut&eacute; 4 minutes. Reduce heat to medium. Add garlic, chickpeas, and tomatoes; cover and cook 8 minutes or until thoroughly heated. Garnish with parsley leaves, if desired.


I've made this dish many times, it's in my regular rotation.  The only changes I made are the addition of 1 t. Italian seasoning while browning the chicken, and 1 cup cooked mini pasta shells to make it a complete meal.  I  serve with a green salad on the side, simple and delicious comfort food!

Okay, so this recipe was five stars after I read the reviews and made some changes.  First I find salt and pepper alone on chicken bland, so I diced up boneless, skinless chicken breasts and sprinkled Montreal Chicken Seasoning on it.  I cooked it with the garlic and a diced up spicy pepper.  After adding the pepper and onion and then the beans and tomatoes I added some crushed red pepper and extra basil.

This recipe was ok.  It was good for what it was, but not too much flavor and I probably will not keep the recipe.  If I were going to make it again, I'd probably do the following: use a yellow bell pepper instead of green, serve over something (couscous?) and probably finish off with some salt &amp; pepper.  I served with pineapple.

I was pleasantly surprised by this recipe.  I would definitely make this again!  I used fresh minced garlic about 3 cloves, and I added this at the same time as the onions and peppers.  I think the other trick to the flavor here is the diced tomatoes.  Make sure to purchase a good quality brand and definitely make sure to get the basil, garlic, and oregano can.  The plain would not do the recipe justice.  I served with a small baked potato.  A small side salad and garlic bread would also be an excellent pairing.  This is great for a quick, easy, and tasty weeknight meal!

Very good~I added some pepper flakes too and it made it very flavorable.  Very filling.  Good with bread.  Comfort food.

This was good, just not outstanding.  Seemed to lack some spices.  Of course, chickpeas are garbanza beans which I discovered.  Will try to spice up the leftovers so see what happens.  Lots of other recipes to try, don't think I will bother again.

Delicious...and very filling.  I wasn't sure my husband would go for it, but he loved it.  It may have helped that I kicked it up with a 1/4 tsp. of crushed red pepper, but we just like a little zip.  Very easy weeknight meal. Looking forward to the leftovers for lunch tomorrow.
