Step 1
In a shallow bowl, whisk the egg and cream.

On a big cutting board or baking sheet with edges, mix the parmesan, pork rind bits, onion, garlic powder, and paprika.

Turn your skillet to medium-high heat and pour in the oil. Dip each steak in the egg mixture, then coat it with the cheese mix. Now, put them in the hot oil. Fry each side for about 3-4 minutes or until they're a lovely golden brown. After frying, set them on a cooling rack or clean kitchen cloth to drop the extra grease.
Step 4
Take out most of the oil from the skillet, but save about two spoonfuls. Drop in some butter and let it melt. Pour in the cream, let it boil, then turn down the heat to let it simmer.
Step 5
Sprinkle in some salt, pepper, and maybe some fresh parsley. If you want a thicker gravy, add a bit of xanthan gum and keep stirring for a few minutes.
Step 6
Place your crispy steak on a plate and pour on that delicious gravy. Enjoy!
