Step 1
Preheat oven to 350 degrees. Brown ground beef in a skillet over medium heat. Season with taco seasoning. It'll take about 10 minutes to cook. Set aside.
Step 2
Warm jicama wraps in a large skillet over low heat. You'll have to work in batches or heat up a second skillet.
Step 3
Once the jicama wraps are warm, place one in the bottom of a muffin tin. Top with 1 tablespoon of shredded cheese and then a second jicama wrap. Top the second jicama wrap with 2 to 3 tablespoons of taco meat and another tablespoon of cheese. Repeat with the remaining jicama wraps, cheese, and ground beef.
Step 4
Once you've assembled all the taco cups, bake them for 10 minutes, until the cheese has melted. Watch closely starting at the 8-minute mark as they can burn quickly!
Step 5
Remove the taco cups from the oven and top them with sour cream, tomatoes, and cilantro. Enjoy!
