Kids loved it! My small picky eater ate 4!!!! He asked me to keep making them bc it was his favorite.

Loved these! I made them meatless with Morningstar meatless crumbles, and I used a Mexican cheese blend. Also mixed the “meat” with diced tomatoes and green chiles. Homemade guacamole to finish it off. Tex Mex snap peas as a side.

These wonton taco cups are the perfect appetizer or fun twist on taco night! Layers of seasoned beef and cheese are baked in layers of wontons in a cupcake pan, then finished off with your favorite taco toppings.

beef (I use 90% lean)

taco seasoning

salt

tomatoes (drained)

wonton wrappers

cheddar cheese

sour cream

green onions

tomatoes

Preheat the oven to 400 degrees. Heat the olive oil in a large pan over medium high heat.

Add the beef to the pan. Use a spatula to break up the meat, stirring constantly. Add the taco seasoning and salt to taste. You may not need to add salt if your brand of taco seasoning already contains salt.

Cook the meat for 4-5 minutes or until cooked through. Stir in the canned tomatoes.

Coat a 12 cup muffin tin with cooking spray. Place one wonton wrapper into the bottom of each muffin cup.

Spoon approximately 1 tablespoon of meat into each cup and top with approximately 2 teaspoons of cheese.

Place a second wonton layer on top of the cheese, then add the remaining meat and cheese across all the muffin cups.

Bake for 10-15 minutes or until edges are browned and cheese is melted.

Top each taco cup with a small dollop of sour cream and a sprinkle of green onions and tomato, then serve.

These mini Enchilada Cups or Taco Cups are fun and easy to make. They are brimming with favorite Mexican flavors and make a great unexpected main dish, appetizer or large batch serving for a party or game day.

Enchilada Cups

flour tortillas (5-6 inch flour tortillas; regular

mild red enchilada sauce

black beans

kernel corn (fresh

jalapenos

blend cheese

cilantro (chopped)

non-fat plain Greek yogurt sour cream

Heat the oven to 350°f. Spray 12 regular size muffin cups with non-stick cooking spray.

Wrap the small tortillas in a damp paper towel and microwave for 10-15 seconds. This softens them and makes them more pliable.

Place the small tortillas in the prepared muffin cavities to form bowls.  You can fill them with beans or tin foil balls to keep their shape while baking.  Ensure the center is kept open (that the folds don&#39;t protrude into the center areas).Bake for 15 minutes or until crispy.

While the tortilla cups are baking, cook the ground beef in a large skillet over medium heat breaking the meat into small crumbles as it cooks. Cook until no pink color remains.

Stir in the taco seasoning and enchilada sauce.  Add the black beans, corn, and jalapenos.

Remove the tortilla cups from the oven. Spoon the beef mixture into the tortilla cups until nearly full.  Top with the shredded cheese.

Bake for an additional 10-15 minutes until the cheese has melted and the filling is warmed through.

Remove and serve with your favorite toppings.

Crunchy wonton shell is filled with a cheesy, beefy center and topped with cheese and baked until bubbly!

Preheat oven to 350.

In skillet brown your ground beef until no longer pink, drain.

Add in your taco seasoning and stir until distributed, stir in your pico de gallo and 1 cup cheese and mix until melted, set aside.

Spray a 24-count mini muffin tin with non-stick cooking spray and place wonton wrappers in wells of each.

Spoon a little of ground beef mixture in each wonton wrapper until they are all filled, then sprinkle with remaining cheese

Bake for about 10-12 minutes or until golden and cheese is melted.

Remove from oven and top with guacamole, cilantro and pico de gallo.

Jicama wraps double stacked with cheese and taco meat, topped with sour cream, tomatoes, and fresh cilantro.
