Step 1

1 Place chicken in a pot, add enough water to cover by 2 inches. Bring to a boil over medium-high heat, reduce to a simmer, and cook until the chicken is cooked through.

2 When chicken is cooked, remove from the pot. Shred with a fork. Set aside.

3 Mix together one pack of rice flour and one package of tapioca starch.

4 Slowly add water to the mixture and stir.

5 Kneed the dough for several minutes.

6 Rest and cover dough for 30 minutes.

7 Dust a rolling pin. Break the dough into smaller balls and roll them out.

8 Cut into 1/4 inch noodles. Dust the noodles with topics starch to prevent them from sticking to each other.

Step 9

9 The noodles can be cooked directly in boiling chicken broth. Alternatively, the noodles can be cooked in a pot of boiled water, strained and then placed in individual bowls.
