Step 1
Preheat oven to 230°C. Grease a large roasting pan. Place potato, pumpkin, zucchini, oil, garlic and oregano in a large bowl. Toss vegetables to coat. Spread over roasting pan. Roast for 30 minutes.
Step 2
Meanwhile, cut lamb into 2cm pieces. Toss in Greek seasoning. Thread onto skewers. Spray lamb with oil.
Step 3
Reduce oven to 200°C. Place skewers on top of vegetables. Bake for 15 minutes for medium or until cooked to your liking.
Step 4
Serve lamb skewers with vegetables, tzatziki and pita bread.
