Step 1
In a bowl, combine the oil, lemon rind, garlic and oregano.

Place the lamb into bowl of marinade and coat on both sides. Leave to marinate for 30 minutes. Meanwhile, soak some bamboo skewers in water while lamb is marinating.
Step 3
Thread lamb cubes onto skewers and cook on a hot plate for 3-6 minutes, depending on the thickness of the lamb cubes. It is best to 'just' cook lamb, otherwise it becomes tough and loses its juiciness.
Step 4
Serve with lemon wedges, pita bread, Greek salad and skordalia.
