Step 1

Bring a large pot of salted water to a boil and cook the noodles according to their packaging. Reserve aside until ready once they are finished.

Step 2

In a large skillet over medium high heat, add the sausage first to brown. Remove the casing first if you buy the kind in link form. The sausage should have lots of fat in it so we are cooking it first to help some of that fat render out to cook the other ingredients.

Step 3

Once the sausage is about half way finished, add in the ground turkey. Season lightly with salt and pepper. Cook until about 90% of the way finished.

Step 4

While the meat is browning, cut up the broccoli slaw and spinach. Cutting the broccoli slaw into a small dice will help it to almost dissolve into the sauce. Roughly chop the spinach.

Step 5

Once the turkey is about 90% of the way cooked, make room in the center of the pan and allow any of the fat to collect in the center. Add in the chopped broccoli slaw and season lightly with salt. Allow it to sauté in the fat and soften. Adding a bit of water can help it to cook faster by steaming the broccoli.

Step 6

After the broccoli slaw has cooked for a couple of minutes, add in the tomato paste, petite diced tomatoes, oregano, basil, and chopped spinach. Let the spinach wilt and the tomatoes to cook down by bringing the mixture to light boil.

Step 7

If your noodles have not been drained yet, drain the water and put them back into the pot. Add in the cottage cheese and parmesan cheese.

Step 8

Once the tomato sauce has cooked for a few minutes, season with salt and pepper to taste and add to the pot with your noodles. Mix everything until incorporated. Taste test and adjust seasonings as necessary.

Step 9

This recipe makes 7 servings. Divide your ingredients evenly into your 7 containers.

Step 10

Measure out the mozzarella cheese and divide it evenly over the top of each dish. You can also garnish with parsley if you wish.
