Step 1

Preheat the oven to 180°C/350°F (fan forced).

Step 2

In a bowl mix the leftover bolognese with the baby spinach (or basil) leaves, cooked pasta and eggs. Spoon into muffin cases, top with the grated cheese and bake for 20-25 minutes.

Step 3

These are delicious both hot and cold.

Step 4

Re-heat in a low oven until just hot.

Step 5

Store in an airtight container in the fridge or freezer.
