Step 1

Preheat a skillet or griddle and spray with cooking spray.

Step 2

In a medium size bowl, add the milk and eggs.

Step 3

Use a whisk to mix together.

Step 4

Pour in the melted butter and whisk together.

Step 5

Add the remaining wet ingredients - lemon juice, vanilla extract and honey. Whisk everything together.

Step 6

Pour the flour, baking soda, baking powder, salt, and poppyseeds on top of the wet ingredients.

Step 7

Use a whisk to whisk the dry ingredients into the wet ingredients.

Step 8

Once the pancake batter is fully combined, allow it to sit for 5-10 minutes to thicken.

Step 9

Pour 1/4 cup of the pancake batter onto the skillet or griddle and allow to cook on each side.

Step 10

Repeat until all of the batter is used.

Place the pancakes on a plate and serve with lemon glaze on top. (Recipe for glaze in the notes)
