To a large of of boiling water add the pasta and cook according to the package instructions.
Step 2
While the pasta is cooking to a medium sized bowl add the ricotta, parmesan, oil, garlic, salt, pepper, and lemon juice stir to combine.
Step 3
Once the pasta is almost finished cooking reserve 1/2 cup of the pasta water that the pasta is cooking in and set it to the side.
Step 4
Now add in the spinach and let it wilt down this will take 1-2 minutes. Strain the water out of the pot.
Step 5
Add in the ricotta mixture and some of the reserved pasta water stir well if the pasta is too thick add in more pasta water until your desired consistency. Enjoy!
