Preheat oven to 190°C/170°C fan-forced. Grease a 12-hole, 1/2 cup-capacity friand pan. Sift flour and sugar into a bowl. Stir in lime rind and almond meal. Make a well in centre.
Step 2
Using a fork, lightly beat eggwhites in a bowl. Add eggwhites and butter to flour mixture. Stir until just combined. Fold through raspberries.
Step 3
Spoon mixture into prepared pan holes until three-quarters full. Bake for 25 minutes or until a skewer inserted in the centre of 1 friand comes out clean. Cool in pan for 5 minutes. Turn out onto a wire rack to cool. Serve dusted with icing sugar.
