Step 1
Place the thyme and limoncello in a glass and mash with a muddler or the handle of a wooden spoon for 2 minutes.
Step 2
Strain the limoncello and pour it into a blender along with the Chardonnay, ice, egg white and gin. Blend until smooth and frothy. Pour into a chilled glass and finish with a splash of club soda. Garnish with the remaining sprig of thyme and a twist of lemon.
