Step 1
Combine your banana, egg, and milk in a blender. By adding wet ingredients first, we prevent dry ingredients from gettings stuck at the base of the blender not combining with other ingredients, a common problem that often occurs if using a relatively weak blender.
Step 2
Then, mix in the rest of your dry ingredients: oats, protein powder, baking powder, and cinnamon. If needed, add more milk in 1 tablespoon increments. Don't worry if there are small lumps! Linda does so using a blender, but mixing by hand will reduce the chances of overmixing which results in not-as-fluffy pancakes.
Step 3
OPTIONAL: Let the pancake batter rest for 10 minutes so the oats can hydrate. This is the key to light and fluffy pancakes! In the meanwhile, why not chop up some fruits and grab your nut butter?
Step 4
Lightly grease a frying pan or skillet, and cook over medium heat until golden brown on both sides.
Step 5
Serve with a GENEROUS dollop of crunchy peanut butter, chopped bananas, berries and maple syrup!
