Step 1

Preheat the oven to 375º. Spray cast iron skillet lightly with nonstick spray.

Step 2

Rub mushrooms with a damp paper towel to clean dirt from the mushrooms. Pat dry with a paper towel. Remove mushroom stems and set mushroom tops aside.

Step 3

In a medium mixing bowl, combine breadcrumbs, melted butter, salt & pepper. Set aside.

Step 4

For the alfredo sauce. In a small skillet over medium heat, melt butter.

Step 5

Add garlic and stir – turn heat to low. Add flour and whisk.

Step 6

Add half and half and Parmesan cheese and simmer – whisking constantly. Alfredo is "done" when it is creamy and cheese is all melted.

Step 7

Spoon half the Alfredo Sauce into the bottom of the pan. Set mushroom caps into the dish on top of the Alfredo.

Step 8

Spoon remaining Alfredo Sauce over mushrooms. Cover all mushrooms with white cheddar cheese. Top with butter breadcrumbs.

Step 9

Bake for 10 minutes. Switch oven from bake to Broil Low. Broil for 2-3 min until breadcrumbs are golden brown but watch very closely on broil so it doesn’t burn.

Step 10

Remove baking dish from the oven. Sprinkle with fresh parsley and serve.
