Step 1
Add the cottage cheese, marinara or pizza sauce, chopped bell pepper, pepperoni, Italian seasoning, and garlic powder to a small mixing bowl. I like to chop up almost all the pepperoni and mix in here, besides about 5 slices to put on top. Season the cottage cheese mixture with salt and black pepper.
Step 2
Transfer the mixture to a small oven-safe bowl. Top with the shredded mozzarella cheese and remaining pepperoni slices. Add extra Italian seasoning on top.
Step 3
Bake at 400 degrees for 5 minutes. Then broil on high for another 2-3 minutes, watching carefully so it doesn’t burn. Alternatively you could microwave the low carb pizza bowl for 1 1/2 minutes.
