Step 1
Preheat oven to 325F.
Step 2
Boil potatoes on the stovetop for 10 minutes or until tender. Add salt, pepper and butter. Add eggs, cream cheese and sour cream and mash to combine.
Step 3
Pour into a greased 9x13 casserole dish and sprinkle with cheese.
Step 4
Bake for 50 minutes. Top with green onions if desired.
