Step 1

Preheat the oven to 350 degrees F.

Step 2

In a bowl, add the beef, the eggplant, the onion, the egg, the milk, the oats, 1 1/2 teaspoons of the salt, and the basil and mix to combine.

Spread the beef mixture into an ungreased 8x8-inch baking pan.

Step 4

Bake the beef mixture, uncovered, until it reaches an internal temperature of 160 degrees F, about 45-50 minutes.

Drain off the excess fat from the meat mixture.

In a small saucepan, add the tomatoes and their juices, the garlic, the cornstarch, and the remaining salt and stir to combine.

Cook the sauce mixture, stirring constantly, until it thickens and comes to a boil.

Let the sauce mixture boil, stirring constantly, for 1 minute.

Step 9

Cut the meat mixture into squares and top with the tomato sauce.

Step 10

Serve the meatloaf garnished with the parsley.
