Mexican Coleslaw Recipe

juiced,

olive oil avocado oil canola oil

honey or sugar

cumin,

salt

shredded cabbage, or bagged cabbage or coleslaw mix

cilantro

Optional Ingredients: 2 tablespoons minced red onion

Whisk lime juice, oil, honey, cumin (if using) and salt in a large salad bowl. Add cabbage and cilantro and toss to coat. If using optional ingredients, add them and toss to combine.

Hello Katie, I enjoyed this coleslaw very much! The leftovers the next day were great - still had a nice crunch and I loved the tangy flavor. I used a bag of coleslaw mix (16oz) and no cilantro (my daughter isn't a fan), so added chopped parsley instead. Perfect amount of dressing. It went well with the sheet pan quesadilla I made. Definitely, something I would make again and would bring to a potluck.

This is so good! I added green onions and jalapeño. Easy to make.
