This tangy Mexican slaw is the perfect side to serve with enchiladas or fajitas! Deliciously fresh and tangy, it features cabbage, red onion, cilantro, and cumin.

Tangy Mexican Slaw

cabbage

carrot (1 large or 2 medium carrots)

red onion

finely chopped cilantro

apple cider vinegar

olive oil

cumin seed

cumin

teaspoon kosher salt

pepper

Thinly slice the cabbage. Shred the carrot. Thinly slice the red onion. Finely chop the cilantro.

In a medium bowl, mix all ingredients together. Taste and add additional salt or pepper if needed. Serve immediately. (Make ahead: slice the veggies in advance and store refrigerated. Mix together with the vinegar, olive oil, cumin seed, ground cumin, salt and pepper directly before serving. Store leftovers refrigerated; if you find the flavor needs refreshing, add a splash of vinegar, drizzle of olive oil and pinch of kosher salt to taste.)

Simple Mexican Coleslaw

green cabbage OR a bag of pre-shredded mixed cabbage

carrots

cilantro

lime juice

honey

garlic

salt and pepper

Toss together the salad ingredients in a large bowl; set aside.

Combine the dressing ingredients together blend with a handblender. You can also just shake them together, but use 1/2 tsp garlic powder instead of cloves.

Toss together all of the ingredients in the large bowl until the salad is completely covered in dressing. Serve and enjoy.

This salad is even better when marinated overnight in the fridge before serving.

Hello Katie, I enjoyed this coleslaw very much! The leftovers the next day were great - still had a nice crunch and I loved the tangy flavor. I used a bag of coleslaw mix (16oz) and no cilantro (my daughter isn't a fan), so added chopped parsley instead. Perfect amount of dressing. It went well with the sheet pan quesadilla I made. Definitely, something I would make again and would bring to a potluck.
