Step 1
Place the strawberries and lime juice in a large, heatproof microwave-safe bowl. Stir well to combine.
Step 2
Place the sugar in a medium, heatproof microwave-safe bowl. Cook, uncovered, on High/800watts/100%, for 3 minutes or until hot.
Step 3
Stir the warm sugar into the strawberry mixture to combine. Cook, uncovered, on High/800watts/100%, stirring every 6-8 minutes, for 38-40 minutes or until the jam reaches setting point (see note).
Step 4
Remove the jam from the microwave and place on a heatproof surface. Set aside for 3 minutes or until the bubbles subside.
Step 5
Meanwhile, fill clean jars with hot water. Once each jar is ready to fill, drain it quickly.
Step 6
Use a ladle to place jam immediately into the jars. Seal immediately. Invert for 2 minutes, then turn upright to cool. Label and date the jars.
