Step 1
Place noodles in a heatproof bowl and cover with boiling water. Cover and stand for 2-3 minutes, then using a fork, separate noodles and drain.
Step 2
Add 1 tablespoon of peanut oil to a hot wok or electric frypan and swirl to coat.
Step 3
Add mince to pan and break up with a wooden spoon. Cook for 6 minutes or until mince is browned. Remove and drain any fat and place mince in a bowl.

Add remaining peanut oil to pan then add onion and garlic. Stir fry for 1 minute.
Step 5
Add broccolli, corn, carrot and capsicum and stir fry for 3-4 minutes or until just tender.
Step 6
Return mince to pan and add soy sauce, barbeque sauce and sesame oil and stir-fry for 1 minute.
Step 7
Add drained noodles and spring onions, and stir to combine.
