Step 1
In a small bowl, mix the sugar with the warm water. Sprinkle the yeast over the water and let it rest for about 15 minutes until it begins to foam.

In a large mixing bowl, add the flour, salt, and olive oil. Make a well in the middle and add the foamy yeast mixture once it's ready.
Step 3
Knead the dough by hand for around 10 minutes or with a standing mixing machine for 5 minutes.Your dough should become beautifully smooth and elastic. There should be no residue left on the sides of your bowl.

Move the ball of dough to a highly floured bowl and cover with a damp towel for about 45 minutes until the dough has doubled in size.

n the meantime, prepare your mini pizza toppings to have them handy for the assembly. Preheat the oven to 185C/ 365F.

When the dough is ready, knock it back. Take around half a handful of dough (or divide into 20 equal parts). Roll it into a round shape as thinly as you like your mini pizza. Repeat until you have a tray full of mini pizzas.
Step 7
Transfer the mini pizza dough onto a baking sheet. Add the desired toppings and bake in the centre of the oven for around 5-7 minutes until the sides of your mini pizzas are golden-brown at the edges.
Step 8
Repeat the last step until you manage to bake all the mini pizzas.
