A combination of two classic comfort foods! It&#x27;s veg-friendly cheeseburger madness on top of mini pizzas, which is basically a vegan dream come true.

mayonnaise

tbsp ketchup

apple cider vinegar

tbsp sambal oelek

onion powder

chives

tsp sea salt

tsp black pepper

pre-made pizza dough,

olive oil

tbsp white sesame seeds (optional)

pkg Yves veggie ground round

C pizza sauce

C diced onion

C tomato

C sliced pickles

Preheat oven to 475°F.

To make the burger sauce, whisk together ingredients in a bowl and set aside.

Cut the pre-made ball of pizza dough into 4 equal pieces.

Spray a baking sheet with cooking oil. Flatten and stretch each of piece of dough to form the pizza crusts. Brush the edges of each crust with olive oil and sprinkle with sesame seeds.

Put veggie ground round into a bowl and break apart so it forms a crumbly texture.

Spread pizza sauce on the middle of each pizza crust. Then top each mini pizza with with vegan cheese slices, diced onion, diced tomato, and sliced pickles.

Bake mini pizzas for 20 minutes or until the crust is golden brown.

Remove from the oven and drizzle with burger sauce. Serve immediately.

Preheat the oven to 400F, or use a small toaster oven and skip preheating. Cut your English muffins in half and lay them on a lined baking sheet, cut side up. Add 1 tablespoon of sauce to each mini pizza crust (8 total), then top with a big pinch of mozzarella cheese.

Add toppings &amp; bake

Next, load each mini pizza with your favorite toppings (about 2 tablespoons of toppings each). Finally, add another tiny sprinkle of cheese to hold everything together after it&#8217;s melty. Bake in a preheated 400F oven for 5-7 minutes, OR toss them in your (not preheated) toaster oven and bake at 400F for 9-10 minutes.

Serve and store

Let the mini pizzas cool completely, then portion into airtight containers and store in the fridge. I prefer two mini pizzas for each meal, plus a side of fresh cut veggies or a salad.

To reheat

Place in a toaster oven and bake at 400F for 4-5 minutes until the cheese is melty; or microwave for 30 seconds (may get soggy this way). These are also very delicious cold!

In a small bowl,

In a small bowl, mix the sugar with the warm water. Sprinkle the yeast over the water and let it rest for about 15 minutes until it begins to foam.

In a large mixing

In a large mixing bowl, add the flour, salt, and olive oil. Make a well in the middle and add the foamy yeast mixture once it's ready.

Knead the dough by

Knead the dough by hand for around 10 minutes or with a standing mixing machine for 5 minutes.<br />
Your dough should become beautifully smooth and elastic. There should be no residue left on the sides of your bowl.

Move the ball of dough to a highly floured bowl and cover with a damp towel for about 45 minutes until the dough has doubled in size.

Slice the eggplant horizontally into 1⁄2-inch (1 cm) thick slices. Brush a little olive oil on each side of the slices and place them on the lined baking sheet.

Sprinkle with a little salt, pepper, and the half amount of dried oregano. Bake in the oven for 15 minutes.

Mix the tomato sauce with the minced garlic, salt, pepper, and the remaining oregano.

Mini pizzas make for a fun and easy pizza night. Make the dough yourself or try one of our ready-made substitutions for a mini pizza dinner topped just the way you like it! Make a big batch for freezing!

Mini Pizza Recipe

tbsp active, dry yeast

tbsp sugar

Pizza Sauce

Place the warm water in a large mixing bowl. Stir in the sugar and sprinkle the yeast over the top. Allow this to set for five minutes. The mixture will start to foam and bubble.

Add the oil, flour, salt, and herbs. Stir with a wooden spoon until a shaggy dough forms.

Transfer the dough to a lightly floured surface and knead for about five minutes until a smooth dough ball is formed.

Transfer the dough ball to a greased bowl, cover, and allow to rise until doubled in bulk, about an hour.

To make the dough by hand

Combine the dough ingredients in the bread machine pan, according to the order recommended by the manufacturer.

Set on dough and start the machine, checking after ten minutes to make sure all the ingredients have been incorporated and not stuck to the side of the pan. Scrape down any stray ingredients to insure they are mixed in.

To make the dough in a bread machine

Place the warm water in the mixing bowl. Stir in the sugar and sprinkle the yeast over the top. Allow this to set for five minutes. The mixture will start to foam and bubble.

Add the oil, flour, salt, and herbs. Attach the dough hook and run the machine until all the ingredients are incorporated, stopping the machine to scrape the sides as necessary. Knead with the dough hook until a smooth dough ball is formed.

To make the dough in a stand mixer

Preheat the oven to 500 °. Spray baking sheets with nonstick cooking spray and sprinkle with corn meal to prevent sticking or line the pans with parchment paper for easier cleanup.

Divide the dough into 16 portions. Flatten each portion into a thin round and place on the cooking sheet.

Spread sauce and sprinkle toppings as desired.

Bake for 8 to 10 minutes or until the crust is crisp and the cheese melted and lightly browned.

Once the dough is ready

Wrap cooled pizzas in foil or plastic wrap and stash in a larger ziptop freezer bag. Thaw and reheat in a 350 oven for about 5 minutes.

To freeze baked pizzas

Assemble the pizzas as directed, but instead of baking, place the trays in the freezer. Once the pizzas are frozen solid (this will take several hours), stack them between layers of patty papers or waxed paper and store in a freezer bag or box in the freezer. To serve: bake from frozen at 450 degrees, for 10 to 12 minutes.

To freeze unbaked pizzas

These were a huge hit! I frozen them completely baked and I had to fight my family to actually have enough to freeze. I throw them in my kid’s lunches and my husband can grab one to reheat for his lunch at home.

Made this twice so far with my toddlers who now enjoy pizza. It’s a quick and easy recipe, and tastes great. My kids are looking forward to many more homemade pizza days/nights. I also love oregano and never thought to add it to the dough until I saw this recipe. I doubt I’ll be buying anymore pizza moving forward. Homemade is the way to go. Thanks for the recipe! :)

I have made these for a while using my go-to slow proof in the fridge dough with garlic powder/herbs.  I make a bunch when I do for the freezer. Before I top, I brush each round with olive oil, prick with a fork and par-bake about 5 minutes at 425F; completely cool on wire racks and then top. Then I Flash freeze until solid and double wrap each in plastic wrap before placing in freezer bags (4 per bag), air removed and stack flat. To bake, I find it bakes better in my oven at 425-450F for about 15 minutes from frozen (less time at 450F).

Made these for my kids' lunch today.  Easy and tasty!  Love the addition of herbs to the dough.  My kids always want lunchables pizza kits, but I rarely buy them for obvious reasons.  Can spend over $10 on them for my 5 kids!  These mini pizzas are great for freezing.  Also, I baked some of the mini crusts untopped: prick it all over with a fork, lowered the temp to 425 for 3 min, flipped them and baked for another 3 minutes.  Now we can make our own pizza kits!

Big hit for lunch today. And my husband is looking forward to having homemade pizza whenever he wants.
