Step 1

Move oven rack to center of oven. Preheat oven to 425°F (218°C). Line a baking sheet with parchment.

Step 2

Whisk together the bread flour, sugar, baking powder, salt, and shredded coconut.

Step 3

Add the cherries and give it all a quick toss. Next, add the coconut milk and use your hands to gently bring together the ingredients. If you need to add a bit more coconut milk or flour, then do so carefully, adding only a teaspoon at a time. The resulting dough will be sticky and clumpy (also known as "shaggy").

Step 4

Turn the dough out onto a lightly floured surface and knead twice (push-pull-squish, push-pull-squish, done).

Step 5

Form the dough into a disc and cut into 6 pieces triangular slices. Gently move to the prepared baking sheet. Brush the tops with a touch more coconut milk.

Step 6

Bake for 10-15 minutes, or until golden on the very edges. Eat hot!
