Mirror Glaze

Add gelatin to half of the water (5oz.) and let it bloom fit about five minutes. In a pot, add rest of the water (5 oz.), sugar and sweetened condensed milk. Bring to a boil and immediately turn off heat. Add bloomed gelatin all at once and whisk until melted into sugar completely. Lastly, add white chocolate chips into pot.  Let them sit a moment, then stir until glaze is completely smooth and shiny. Color as desired and glaze your cakes! Enjoy.
