In a large bowl or resealable container, combine the almond milk, oats, cherries, orange juice, pepitas, brown sugar, carrot, apple, cinnamon and ginger. Stir to combine, then cover and refrigerate overnight.

Step 2

When ready to serve, top bowls of oats with orange slices, apple, toasted coconut flakes, pepitas and another drizzle of almond milk, if you like.
