Ingredients: 450 g canned pineapple crushed; 375 g mixed dried fruit; 125 g raisins; 1 cup sugar; 125 g butter; 1 tsp bicarbonate of soda; 1 tsp mixed spice; 1 tsp nutmeg; 1 cup self-raising flour; 2 eggs; 1 cup plain flour; 60 g pecans chopped optional

Step 1

Combine the first 8 ingredients in a saucepan. Bring to the boil and simmer for approximately 5 minutes. Cool.

Step 2

To the cooled mixture, add the self-raising flour and 1 egg. Mix well. Add the plain flour and the other egg.

Step 3

Mix in the pecans.

Step 4

Place mixture into a well greased and floured 20cm x 20cm cake tin.

Step 5

Bake for approximately 2 hours at 150C.
