Step 1
24 hours prior to cook:-Dust the steaks with kosher salt.-Set them on a rack on a tray and place inrefrigerator uncovered overnight.
Step 2
Day of the cook:Rub steaks down with olive oil, seasonwith BBQ Rub and add your thermometerinto the thickest part of the steak.
Step 3
Add pellets to NWG pellet hopper.
Step 4
Set NWG to smoker setting at 250F (121C).You can leave the default time as is.
Step 5
Hit the start button and let NWG gothrough the ignition process.
Step 6
Add the steaks to the grill and shut the lid.
Step 7
Smoke the steaks until they hit 110-115F(43-46C) internal temperature.
Step 8
Remove steaks from the NWG.
Step 9
Move dial on NWG to Grill setting High at10 minutes, hit start and let it run throughthe pre-heat process.
Step 10
Add the steaks back on the grill and searboth sides. Flipping every 1 minute or sountil the internal temperature hits 130F(54C) in the thickest part for medium rare.
Step 11
Remove from the NWG and let rest for 10-15 minutes.
Step 12
Slice steaks and enjoy!
