Step 1
Sift dry ingredients into a mixing bowl, and rub in butter.
Step 2
Make well in centre of flour and add beaten egg, sultanas, and milk, adjusting amount of milk as required, to create a dough that doesn’t stick to sides of bowl.
Step 3
Knead on lightly floured board until dough is smooth and elastic.
Step 4
Place in a lightly oiled bowl and cover with a cloth. Leave bowl in a warm place until dough doubles in bulk.
Step 5
Punch dough down, and knead again on lightly floured board until dough is elastic and smooth.
Step 6
Cut dough into pieces weighing between 90 g and 95 g each.
Step 7
Put buns on lightly oiled flat baking tray and place in warm place again for a further 20 minutes, or until the buns have risen to almost double again.
Step 8
Bake at 230C or 200C fan-forced for 15 minutes.
Step 9
When done, remove from oven and brush generously with glaze, then transfer to a wire rack to cool.
