Step 1
Preheat oven to 180°C. Line 2 baking trays with non-stick baking paper.
Step 2
Combine oat bran, flour, cheddar, bicarbonate of soda and salt in a bowl.
Step 3
Heat butter and water in a medium saucepan over medium heat until butter melts (see microwave tip). Set aside for 15 minutes to cool. Gradually stir into oat-bran mixture until well combined.
Step 4
Turn dough onto a lightly floured surface and gently knead until smooth. Use a lightly floured rolling pin to roll dough to about 5mm thick. Use a 7cm pastry cutter to cut 16 squares. Place on lined trays and prick with a fork. Bake for 25-30 minutes or until golden brown.
Step 5
Place biscuits on a rack to cool. Serve with blue cheese and quince paste.
