Step 1

In a large bowl mix the 3 cups flour, 1 & 3/4 teaspoons salt, and 1/2 teaspoon yeast.

Step 2

Next, pour the 1 & 1/2 cups of water into the dry ingredients and mix until all of the ingredients are combined.

Step 3

Then add the 1/2 cup of kalamata olives and 1/2 cup of green olives and mix until the olives are evenly dispersed.

Step 4

Cover the bowl with plastic wrap and let it rest on your counter for 12-18 hours.

Step 5

Place your dutch oven in the oven and then preheat the oven to 450 degrees Fahrenheit.*(2)

Step 6

On a large piece of parchment paper dusted with flour*(shape your dough into a ball.

Step 7

Carefully remove your dutch oven from the preheated oven, remove the lid, place the parchment paper with the dough on it inside the bowl, and replace the lid on top.

Step 8

Bake for 30 minutes with the lid on.

Step 9

After 30 minutes remove the lid and bake for an additional 10-15 minutes until your bread is golden brown.

Step 10

Remove the parchment paper with the bread on it from the dutch oven and place it on a cooling rack to thoroughly cool.

Step 11

Slice and enjoy. *(5)
