In a mixing bowl, whisk together flour, baking soda, baking powder, ground star anise, finely chopped dark chocolate, and salt. In a separate bowl, whisk together olive oil, almond butter, brown sugar, granulated sugar, date syrup, vanilla, and apple sauce (or egg yolk) until well combined. Add dry ingredients and mix until well combined into a smooth cookie dough. Cover the bowl with plastic wrap and refrigerate for 30 minutes. Pre-heat oven to 355°F/180°C and line a baking sheet with parchment paper. Roll 2 tbsp worth of dough (33 g) into a ball and place 2-3 inches apart on the parchment-lined baking sheet. Press large coarsely chopped pieces of chocolate onto the top of each cookie. Sprinkle with a pinch of flaky salt onto each cookie dough ball and bake for 9-12 minutes, or until the edges of the cookies start to brown. Cool completely on the baking sheet before enjoying!
