Step 1
Heat oil in a large saucepan over high heat. Cook mince, breaking up with a wooden spoon, for 7-8 minutes or until browned. Add sweet potato and capsicum. Cook, stirring, for 2-3 minutes or until softened slightly.
Step 2
Add taco seasoning, salsa, 1/2 cup water and beans. Bring to the boil. Reduce heat and simmer, stirring, for 5 minutes or until thickened.
Step 3
Top mexican pork with onion, coriander and chips. Serve with sour cream and rice.
