Step 1
Place biscuit crumbs in a bowl. Add butter and demerara sugar and mix well.

Press biscuit mixture into a greased 20 cm cake tin with a loose base. Leave to harden.

Grate some orange and lemon rind, place in a blender. Remove the skin and pith from the orange and lemon and place the fruit segments with the rind in the blender.
Step 4
Melt the gelatine in the hot water.
Step 5
Add cheese, caster sugar, gelatine and boiling water to the blender.
Step 6
Pour into biscuit base and leave to set in the fridge.
Step 7
Decorate with tinned mandarins or chocolate shavings and cream.
