Strawberry Sugar Free Cake Recipe

Tablespoons (100 grams) sugar sweetener

almond flour

baking powder

Tablespoons oil

Vanilla Extract

Meringue Icing

Strawberry jam

Strawberry powder

Prepare all ingredients

Start preparing all of the ingredients. Have your eggs at room temperature and separate egg whites and yolks. Sweetener is best to have powdered for baking as it melts much easier. If you have made our recipes, prepare jam and powder, and make the frosting if you have not. At the same time, heat your oven to 160 Celsius or 320 Fahrenheit. 

Whisk Egg Whites and Egg Yolks

Using your kitchen machine, place egg whites into the bowl and mix until fluffy. Place the bowl aside. Using a second bowl, add egg yolks together with sweetener and whisk. 

Once you whisk your egg yolks, scoop in the egg whites into the bowl and mix on low until combined.

Add the rest of the Ingredients

Add all other ingredients using a spoon while your machine keeps whisking them. 

Pour and Bake

Once your cake batter is thoroughly combined, pour it onto the large cake pan and bake for 30 to 35 minutes. 

Spread Jam

Make sure your sheet cake is thoroughly cooled before going into the next steps. Make small holes throughout the cake using the back of the spatula or wooden stick. This will help your jam to get directly into the cake to add more moisture and flavor.  Once your holes are all made, cut your sheet cake into half and spread half of the strawberry jam on one half of the cake. Place the other half of the top of the cake to form two layers. 

Extra Jam and Frosting

Spread the rest of the jam on top of the second layer of the cake. On top of that goes meringue frosting. You can either spread it with a spatula or fill our icing bag and frost it. 

Strawberry Powder

Lastly comes our strawberry Powder. Place powder into the sieve or bigger tea sieve, as I have done, and gently powder your whole cake with dehydrated strawberry powder.

Heavy on the butter and topped with powdered sugar, this cake has all the flavors of your favorite cake donut in a convenient square shape.

Powdered Sugar Donut Cake

[150 g] granulated sugar

[220 g] sour cream

[113 g

nutmeg

vanilla extract

[190 g] all-purpose flour

baking soda

unsalted butter (melted)

confectioners' sugar

Position an oven rack to the center of your oven and preheat the oven to 35oF [180C]. Butter or coat an 8-inch square baking pan with nonstick spray. Line the pan with a strip of parchment paper that hangs over two of the edges. 

In a large bowl, whisk the granulated sugar and eggs until pale and foamy, about 1 minute. Add the sour cream, butter, nutmeg, vanilla, and salt. Whisk until smooth and emulsified. 

Add the flour, baking powder, and baking soda. Whisk until well-combined and smooth. 

Pour the batter into the pan and bake the cake until puffed and golden, and a skewer inserted into the center comes out clean, 25 to 35 minutes. Set the pan on a rack to cool for about 15 minutes. Then use the parchment paper to lift the cake out of the pan and set it on to the rack to cool almost completely.

For the cake

While the cake is just warm to the touch, brush the top with the melted butter and dust with the confectioners&#039; sugar. you should have a nice thick layer of confectioners&#039; sugar - more than you think might be necessary. (Store the cake, covered, at room temperature for up to three days. The cake will absorb the sugar on top, so it might need a fresh dusting of confectioners&#039; sugar after the second day.)

To Assemble

This was so delicious! My daughter made it after we watched “Is It Cake?” on Netflix. One baker on the show (Andrew!) made a donut cake. We Googled and I thought your recipe had the best potential to be donutty, light and fluffy. And yes! It was perfect! I love the subtle nutmeg taste.
