Preheat oven to 350F. Add apples, maple syrup, lemon juice and cinnamon in a large bowl and toss to combine. Transfer filling to a 10” cast-iron skillet or ovenproof dish.
Add cassava flour, nuts, maple syrup, cinnamon, and ghee to a large bowl and toss until combined.
Spoon the crumble overtop of the apple filling and transfer the skillet to the oven. Bake for 40–45 minutes, or until crumble is golden brown and the apples are bubbling.
Serve immediately with dairy-free, vanilla ice-cream.
