Step 1

With an electric hand mixer, beat the eggs, egg yolk, and the granulated sugar until fluffy.

Step 2

Sift the flour and potato starch together. Melt the butter in the microwave or in a small bowl over a bain-marie. Incorporate the flour and starch into the beaten eggs, then slowly pour in the butter; finally add the zest of half an orange and combine for the "pasta paradiso" batter.

Step 3

Wash the grapes, cut them horizontally without slicing all the way through, remove the seeds, and put them back together.

Step 4

Preheat the oven to 350°F

Step 5

Line an oval or rectangular (10” x 8”) baking dish with parchment paper; line it with the puff pastry dough and trim the excess. Pour the batter into the puff pastry shell, then sprinkle with the grapes and walnuts. Dust with powdered sugar and bake at 350°F for 45-50 minutes. Remove from the oven and serve cold.
