Pickled Grape Salad

Cotton Candy grapes (or green seedless grapes, halved)

serrano chile (halved and thinly sliced)

orange juice

lime juice

lime zest

orange zest

cumin seeds (toasted and crushed)

onion

rib celery (sliced)

salt

olive oil

cilantro leaves (roughly chopped)

mint leaves (roughly chopped)

In a medium bowl, toss the grapes with the serrano, lime and orange juices and zests, cumin, red onion, celery, salt and olive oil and toss until fully coated. Add the cilantro and mint and toss to incorporate.

400 gr de azúcar

jugo de medio limón

Pelar y despepitar las uvas. Hay que dejar macerar la fruta con el azúcar, yo la dejé toda la noche, pero con unas cuantas horas es suficiente. Luego colocamos la fruta con el azúcar y el jugo en una cacerola y hacemos hervir a fuego moderado, revolviendo cada tanto para que no se pegue.

Mientras ponemos a hervir los frascos con sus tapas para esterilizarlos, por 20 minutos. Los sacamos del agua y esperamos que se sequen solos sobre un paño limpio.

La mermelada tarda en hacerse unos 45 minutos, en los cuales tiene que seguir hirviendo, a veces se forma un poco de espuma que debemos sacar y revolver cada tanto con cuchara de madera.

Comprobamos su punto colocando un poco de mermelada en un plato y llevando a la heladera por unos minutos, al dar vuelta el plato, la mermelada no debería caerse del mismo, si esto sucede debemos esperar 5 minutos más y repetir la prueba hasta que quede adherida al plato.

Podemos procesar la uva, picar la fruta cuando esta hervida y blandita, con mucho cuidado de no quemarse.

Chilled garlic soup garnished with sweet grapes is a refreshingly light starter.

1 1/4CUP milk

almonds

3 1/2OZ. stale bread

1OZ. sherry vinegar

garlic

green grapes

pepper

Soak the bread in the milk. Finely chop the almonds; peel the garlic, removing any green shoots, and chop. Peel and de-seed grapes (around 1-1 1/2 cups).

In a blender, purée the bread, almonds, and garlic. Add oil, 1 cup chilled water, vinegar, salt and pepper. Place soup in the refrigerator to chill.&nbsp;

Once chilled serve the soup garnished with the peeled and de-seeded grapes.

Pasta Paradiso translates as heavenly dough; similar to sponge cake, the light and fluffy cake baked in puff pastry is divine. 

Pasta Paradiso in a Puff Pastry Shell With Grapes and Walnuts

puff pastry dough, rolled out

1/4CUP all-purpose flour

potato starch

unsalted butter

1OZ. black grapes

walnuts

eggs

orange

With an electric hand mixer, beat the eggs, egg yolk, and the granulated sugar until fluffy.&nbsp;

Sift the flour and potato starch together. Melt the butter in the microwave or in a small bowl over a bain-marie. Incorporate the flour and starch into the beaten eggs, then slowly pour in the butter; finally add the zest of half an orange and combine for the "pasta paradiso" batter.

&nbsp;Wash the grapes, cut them horizontally without slicing all the way through, remove the seeds, and put them back together.

Line an oval or rectangular (10” x 8”) baking dish with parchment paper; line it with the puff pastry dough and trim the excess. Pour the batter into the puff pastry shell, then sprinkle with the grapes and walnuts. Dust with powdered sugar and bake at 350°F for 45-50 minutes. Remove from the oven and serve cold.
