Step 1
Firstly, add the uncooked boba pearls to ½ cup of boiling water for approximately 15 minutes or until fully cooked.
Step 2
To make the fruit-flavoured simple syrup, peel, deseed and chunk the peaches. Add the water and sugar to a saucepan and stir until dissolved. Afterwards, add the chunks and stir and mash until bringing it to a boil. Then reduce the heat to medium-low and simmer to thicken the syrup. Strain the syrup into a different container.
Step 3
To make the green tea, boil about 700ml of water and let it cool to around 80 degrees celsius. Then add the water into the infusing vessel. Add the teabags and let them steep for three minutes.
Step 4
To assemble the peach bubble tea, add 1 tablespoon of fruit syrup to the bottom of the serving glass. Fill the glass ¾ of the way with green tea and add boba pearls. Finally, top with milk and ice.
