Step 1

Preheat oven to 350F.

Step 2

Heat oil in a large skillet over medium-high heat.

Step 3

Add the diced onions, diced green peppers and sliced mushrooms to the skillet.

Step 4

Add 1/2 tsp of salt and 1/2 tsp of pepper to the skillet.

Step 5

Stir well and cook until the onions are translucent and the mushrooms are starting to brown.

Step 6

Remove the skillet from the heat and set aside.

Step 7

Dump the ground beef into a large mixing bowl.

Step 8

Add the eggs, milk, bread crumbs and gravy mix to the bowl.

Step 9

Add the salt, pepper, garlic powder Worcestershire sauce and steak spice to the bowl.

Step 10

Use your hands to combine all of the ingredients well.

Step 11

Line a 9.5 x 5 inch loaf pan with aluminum foil and spray well with cooking spray.

Step 12

Dump about 2/3 of the meat mixture into the loaf pan and press it into the bottom and up the sides leaving the center hollow.

Step 13

Place 1 cup of the shredded cheese in the hollow.

Step 14

Set aside 1/4 cup of the onion, green pepper and mushroom mixture.

Step 15

Pour the remaining onion, pepper and mushroom mixture over the cheese in the loaf pan.

Step 16

Place the remaining 1/3 of the meat mixture on top and spread it out to cover all of the filling.

Step 17

Place the loaf pan in the oven and bake the meatloaf for 50 minutes.

Step 18

After 50 minutes remove the loaf pan from the oven.

Step 19

Sprinkle the remaining cup of shredded cheese on top of the meatloaf.

Step 20

Sprinkle the 1/4 cup of the onion, green pepper and mushroom mixture on top of the cheese.

Step 21

Return the loaf pan to the oven and continue baking until the cheese is completely melted and just starting to brown around the edges. 10 - 15 minutes.

Step 22

Remove the pan from the oven and leave the meatloaf to rest in the pan for 5 minutes.

Step 23

After 5 minutes, use the foil to lift the meatloaf out of the pan.

Step 24

Slice and serve.
