Step 1
Combine kosher salt and lime zest in a mortar and pestle. Grind together until combined and fragrant. Store in an airtight container.
Step 2
Cut a small notch in the center of the lime wedge. Run the notch around half edge of a margarita glass to moisten. Fill a small plate with lime salt, turn the glass on its side, and press wet side into the salt to coat. Fill glass with ice and set aside.
Step 3
Add pineapple juice, tequila, lime juice and Cointreau to a cocktail shaker. Fill with ice and shake until cold and frothy, about 15 seconds.
Step 4
Strain into prepared glass and serve immediately.
