Step 1

Combine the plums, pistachios, cinnamon, and oil in a food processor and process until a ball forms like dough.

Step 2

Using your hands, roll the mixture into 1" balls. You should end up with about 16.

Step 3

Spread the shredded coconut on a plate and roll the balls in the coconut until they are covered in coconut.

Step 4

Enjoy! Refrigerate the remaining balls so they stay nice and formed together.
