Step 1
Soak the skewers in cold water for 10 minutes. Drain.
Step 2
Meanwhile, juice 2 of the limes and cut the remaining limes into 8 wedges each. Combine the lime juice, oil, coriander, salt and pepper in a large, shallow non-aluminium dish.
Step 3
Thread the lime wedges, pork and onions onto the skewers. Add the skewers to the lime mixture and turn to coat. Set aside for 10 minutes to marinate (or longer if time permits).
Step 4
Place the cucumbers, avocados, snow pea sprouts and lemon juice in a large bowl. Season with salt and pepper, and toss gently to combine.
Step 5
Lightly brush a barbecue plate or heavy-based frying pan with the oil to grease and heat over medium-high heat. Add the skewers and cook for 5-6 minutes each side or until the pork is just cooked. Serve with the avocado salad
