Step 1

In a saucepan, add the peeled tomato cut into small chunks, chopped onion, pork, chopped garlic, carrot cut into pieces, salt, pepper, paprika, bay leaf and olive oil. Stir, cover the pan with a lid and cook over low heat until the tomato start to break down, stirring occasionally.

Step 2

Add the rice and season with a little salt. Stir, pour the chicken broth and boil over medium-high heat. When starts boiling, reduce to low heat and cook for about 10 to 12 minutes.

Step 3

Turn off the heat, sprinkle with chopped coriander and serve immediately.
