Potato Chowder

I only had Cream of Mushroom avaiable and the chowder was superb.  I sauteed the onions using a dutch oven, then added the other items.  Be sure to soften the cream cheese cubes before adding.   This is a bookmarked recipe for me!

I really like this soup. I used gluten free cream of cauliflower soup and that worked great. Chives and bacon make it amazing.

Best potato soup ever! I didn’t have any potatoes so I substituted tomatoes (sounds similar) I also replaced the chicken broth with veggie stock, and the cream of chicken with cream of mushroom, and replaced the cream cheese with white cheddar, and then added green beans, corn, frozen asparagus, navy beans, and chopped broccoli. Substituted green bell peppers for the onion. Also added cumin and chili powder, and a splash of pale ale. Also, baked it i in a casserole dish in the oven instead of a crock pot. The recipe was perfect! Will make agin.

So simple, I put it together in 10 min and dinner made itself.  The cream cheese makes it smooth and rich.  I added one diced carrot and one celery stock sliced

First, I would suggest to Nanette, try using whipped cream cheese available most anywhere block cream cheese is sold. I've made this a few ties now and have made a few modifications I like even better. For example, try substituting Cream of Mushroom Soup for Cream of Chicken. I also like adding 2 diced cloves of garlic, thickening with instant mashed potatoes and I topping each bowl with shredded cheddar cheese. I also like to keep my bottle of Louisiana Hot Sauce close by.  :-)

How interesting to put cream cheese in potato soup. My crockpot must get a little hotter than most on low heat. I only had to cook the potatoes for 5 hours. The last thing you want is mussy potato soup, So watch the cook time.

Made this as is, except I added some garlic (personal preference). After the cream cheese melted, it was still a little thin, so I added a few tablespoons of instant potato flakes and it was perfect! Topped with cheese, bacon and chives. Great on a cold evening!

I love the ease of this recipe!  I substituted cream of mushroom soup for the cream of chicken (I used two cans) and since I used low-sodium chicken broth, I added kosher salt to taste and a few dashes of Worcestershire sauce at the end of cooking.  I also threw in a few slices of American cheese along with the cream cheese and used a whisk to combine it.  This soup is so simple to put together!  We garnished ours with crumbled bacon and sharp cheddar.  Everyone loved it!

This was very good. Agree with others, the cream cheese needs to at least be at room temperature to blend in. We added ham instead of bacon, garlic and more pepper.

This is so good!!  I added a TBsp of Worcestershire sauce,  increased the onion a bit, added shredded carrots and diced red bell pepper.  Yummy!

Okay this soup is yummy!!  I made it a little different because I'm a vegetarian, using vegetable broth and cream of mushroom soup (i also put some vegetarian bacon on top which was so yummy).  I also just put it in a pot and cooked it that way (don't have a slow cooker) it cooked in about 20 minutes and was sooo yummy!!

I used a bag of frozen diced potatoes. Saute them until soft and then followed the recipe. Quicker but still tastes great.

I made this after reading the most negative reviews, and my result was great. First, I started off on HIGH and after two hours, I added the cream cheese, which I had not only cubed, but microwaved until it was melty. I stirred it into the soup, and after about an hour, it was all incorporated perfectly--no flecks nor lumps, and it thickened the soup perfectly. I kept it on HIGH for four hours, then switched to LOW and with a potato masher, pressed down some of the now-soft potatoes. The soup was good, but bland, so I added four small cloves of fresh, minced garlic. I added a bit more pepper.The way I diced my (red organic) potatoes, 8 C = three pounds. I could see adding chopped ham (you can buy it chopped) in lieu of bacon. Chopped chives and bacon make a pretty and tasty garnish, as would cheddar shards or shreds.Easy; a bit time consuming to cube the potatoes. I'd make it again, though!

This recipe is very easy to put together. I followed the recipe exactly as written but was not at all impressed. I also used whipped cream cheese and even microwaved it on low for a bit first to soften it even further and it still didn't mix in at all. I've had other potato soups that were just as easy to prepare and much more delicious and appealing to the eye. I'll stick with those. I gave it three stars for ease of preparation but the flavor was two stars for me personally. Sorry!! :(

Skip the cream cheese. Could not get It to melt even after softening in the microwave and having slow cooker on high. I tasted it before adding the cream cheese and it was delicious without it. I wish I had not added as it just left pieces through the soup which was not good.

Amazing recipe!!  My whole family loved it!  I added about 2 cups of chopped, fully-cooked ham instead of bacon, and topped with chopped green onions!  Very good recipe!

I made it per directions plus added a small can of corn. Not fan of bacon so left out. Delicious.

For years this has been a "go to" recipe for me whenever I need to bring something for a pot luck. I found this in the hardbound quick cooking book that this was published in many years ago. It could not be any easier than this, and it is wonderful. I always get requests for the recipe. My husband likes to add a can of clams to his (I don't care for clam chowder), and he assures me it is delicious. It is very filling and budget friendly.
