Step 1
Rinse the potato. Bring to a boil and cook the potato until tender. When tender, add the spinach leaves and continue cooking for 10 more minutes.
Step 2
Blend the vegetables and any remaining cooking water with all the other ingredients except the parsley.
Step 3
Put the blended soup mixture in a medium saucepan and stir in the parsley.
Step 4
Bring the mixture to a boil then let simmer for 10 minutes. Add seasoning.
Step 5
Serve garnished with extra parsley and onion on top.
