Step 1
In a large pot of salted water, boil the pasta by the packet instructions. Reserve one cup of pasta boiling water for later use. Once it is cooked, drain water.
Step 2
Meawhile the pasta is cooking, you can prepare the prawn and chorizo.
Step 3
Heat the pan into medium-heat, drizzle olive oil and saute the chorizo for 1-2 minutes. Remove from pan and set it aside.
Step 4
Add prawns in the remaining oil. Once the prawns turn pink turn sides, stir in chopped garlic. Season the prawns with salt, pepper and smoked paprika. Stir it well.
Step 5
Now place the chorizo and boiled pasta in the pan. Season with salt and pepper to taste.
Step 6
Pour half cup of reserved pasta water in. Add more water if needed.
Step 7
Toss well to combine everything evenly, until there is no water in the pan.
Step 8
Turn off the heat, squeeze fresh lemon juice and sprinkle chopped parsley.
Step 9
Transfer to serving plate and garnish with freshly grated parmesan and parsley if desired.
